I am back with the second segment of my Summer Series! And I am giving you a recipe for… drum roll please… Egg Rolls! Because come on regardless if you’re ordering orange chicken or Lo Mein you gotta get some egg rolls.

Well throw away your raggedy Chinese delivery menu because I have a recipe for eggs rolls that is so quick and easy you’ll be munching on them before they’ve even written your order down.

These rolls have just the right amount of crispiness with the perfect amount of flavor packed into the filling. One bite and you will know what I mean.

So let’s get started.


Egg Roll Ingredients

Ingredients.

Rolls
1 Tb Minced Ginger

1 Tb Minced Garlic

1 lb Ground Turkey

1 Package of Broccoli Slaw (8.75 oz)

3 Tbs Soy Sauce

1 Tb Fish Sauce

1 tsp Sesame Seed Oil

1 Tb Rice Vinegar

2 Tbs Brown Sugar or Maple Syrup

1 Package of Egg Roll Wrappers

Small cup of water for assembly

Oil for frying
Sauce
4 Tbs Soy Sauce

1 tsp Sesame Seed Oil

1 Tb Fish Sauce

1 Tb Rice Vinegar

1 tsp Minced Garlic

1 tsp Minced Ginger

1 tsp Garlic Powder

Filling.

To start off toss your ginger and garlic with some oil in a pan at medium high heat. Let cook for about 30 secs before adding the ground turkey. Let the meat cook until brown. 5 mins.

Add all the seasonings. Set aside.

Next add the veggie mix to the pan with a little bit of soy sauce, garlic powder and brown sugar to taste. Saute until brown. About 5 mins.

Set aside.

* I cooked my veggies and meat separately so that I could make some veggie and some meat filling. If you are going to make all meat filling, you can cook the veggies and meat together in the same pan.


Assembly.

Now it’s time to actually assemble these rolls.

First step: Take a deep breath. Wrapping theses is not as complicated as it seems.

*You can find egg roll wrappers at most grocery stores in the produce area usually near the prepackaged lettuces.

First Step.

Place wrapper down so that it looks like a diamond.

Add 2 Tbs of filling to the center of the wrap.

(Keep unused wrappers covered to prevent drying out)

Second Step.

Lift bottom corner over filling.

Third Step.

Fold both the left and right corners into the middle.

Last Step.

Brush some water or dab with fingers the top corner of the wrap. Then roll the egg roll from the bottom until the top flap covers the whole thing.

Done. See that wasn’t too bad.

 


Frying/Cooking.

My favorite way of preparing these is simply frying them up, but if you are trying to be a bit healthy you can bake these in the oven.

Fry.

I just bought a deep fryer so I just simply let my fryer heat up and dunked these in there, two at a time, for about 4-5 minutes at 380 F degrees.

If you don’t have a  fryer you can make these on the stove top in a frying pan. Make sure the pan isn’t over crowded and cook until golden brown flipping occasionally. About 2-3 mins.

Once done frying let them cool on a rack for a minute.

Bake.

To bake these lightly brush the egg rolls with oil and place on a greased baking sheet. Cook for 10 -12 mins at 400 F degrees .

Serving.

These rolls are the perfect summer treat.

Dish up a platter of them with some tall refreshing glasses of ice tea for a light lunch date with your best friend.

Or grab a blanket and get cozy on the couch with a good movie while you munch of these yummy Friday night treats.

    Liz, I am in awe. Thank you for giving us one more treat that we can make ourselves. Because of food allergies. I must be careful about ingredients that I can eat. So, cooking myself is the best option. It also keeps us from eating processed food that must have extra, sometimes unhealthful ingredients added to maintain shelf life.
    Cooking at home with our busy lives needs to be concise and simple, but it is also a healthy option. Frying upon occasion can be a healthy option because if it done with good oil (like the rice bran oil you used for this recipe) at high enough temperatures the oil doesn’t saturate the food, making it super caloric and fatty. Love the fryer idea because it does just that. We bought ours at Breed and Company on 29th Street. (A plug for our favorite neighborhood hardware store, where we have been shopping for over 30 years Breed and Company on 29th Street. Holla at our girl Cheryl with the awesome hair.
